Since 1984, the Stillwater Inn has been offering East Texans and visitors to Jefferson an ambitious fare, not previously seen in area restaurants. Grilled breast of duck, Colorado lamb rack, fresh seafood options such as Alaskan halibut, salmon and Dover sole have distinguished the seasonally changing menu. In addition, center cut steaks and filets have always been a mainstay.

Surrounded by a white picket fence with pecan and dogwood trees, the restaurant is located in an 1890's Eastlake Victorian home. Originally owned to two successive pioneer doctors, St. Cloud Cooper and Thomas H. Stallcup, in the 1930's the home was purchased by Mr. Joe Joseph, whose family lovingly maintained and improved the property until it was sold in1976.

Bill and Sharon Stewart moved to Jefferson from Dallas in 1983, and purchased the house with a view towards opening a fine dining restaurant.The gracious home lent itself easily to repurposing as a casual but elegant dining establishment with four separate dining rooms and a service bar, as well as three wood burning fireplaces which add a cozy ambiance during the winter months.

The restaurant opened to the public in March of 1984. A carefully selected wine list, and full bar are offered to enhance the dining experience. In addition, a private cottage is available for overnight accommodation.
